The blackberries for ‘Creme de Mure’ are harvested at the end of the summer, when perfectly ripe; an essential guarantee for quality. As for the Cassis, the fruit is macerated just after the picking and the acidulous flavour and aroma of Blackberry – both surprising and delightful – is preserved while bottling.
